Why are the double bonds (C=O and C=N) not depicted explicitly aside from, I guess, the inference made from the number of neighboring hydrogens?

They're in there, they're just the same color as the hydrogen molecules and slightly bigger.

No, the sandwiched carbon forms a double bond with only one of the neighboring nitrogen. Contributes to caffeine's overall aromaticity, I guess.

Chemically speaking,

Double bonds are inferred from bond length, absorption energy, number of neighboring atoms, and bond angles. it's fairly valid to represent these with one line as some types of model kits do, as long as you maintain correct angles.

Atoms don't actually have a color. Most of the time carbon is coded black and oxygen red, and that's just arbitrary model kit coloring.

If you're gonna do a geek shirt, do it right.

Needs double bonds, different color for oxygen atoms, and the label 120 mg 1,3,7-Trimethylxanthine.

120 mg is roughly the amount in a cup of coffee. 618 micromol would be an acceptable alternative.
