That's probably true. But if a kid sees frequent sex in movies, this is a relatively new concept to them. Other than what parents tell them, they may think it is okay for someone their age.
For violence in movies, kids will already know this concept (like bullying). Combined parental and social upbringing will already tell them that violence is wrong without them thinking about it. Movie violence may be more extreme, but it is not something a normal kid would want to try because it's new. (I still wouldn't suggest showing many R movies to middle schoolers.)
