The Latin should say Ex Uno Plures. I get it as is, but it's wrong.

Only if you don't know any Latin. It's not that it's grammatically incorrect, it's that it means exactly the same thing as the original.
Granted, there are probably more people that don't know any Latin buying shirts than do.

I agree, and this is a reason why I wouldn't get the shirt. If you want it to look closer to the original, E Plures Uno would work--it means the same thing as Ex Uno Plures but looks closer to E Pluribus Unum.
If this doesn't win the derby, a corrected version would be an awesome critics pick!
